Veggie burgers are always a ‘hit or miss’ kind of thing for me. Until I found this recipe, and now even your most staunch meat-eater will be begging for more. These veggie burgers are easy to make, and the matcha tea makes them a tasty, healthy way to enjoy your favorite fast food.
Veggie Burger Ingredients
- 400g can chickpeas, drained
- zest from an organic lemon plus juice from 1/2
- Salt and freshly ground pepper
- small bunch coriander, chopped
- 1 egg
- 2 tbsp. culinary-grade matcha
- 1/4 cup red onion diced
- 1 cup fresh breadcrumbs
In a blender, mix the chickpeas, lemon zest and juice, salt and pepper, coriander, onion, culinary matcha tea and egg and blend until smooth (about 30 seconds). Add all but 2 tablespoons of the breadcrumbs and form the mixture into 4 veggie burgers. Press each burger lightly into the breadcrumbs on both sides. Cover the veggie burgers and leave to chill in the fridge for at least 15 minutes-this helps them to stick together rather than falling apart when they are cooked.
Fry lightly on both sides or grill on the barbecue, brushing lightly with oil on both sides.
Serve your veggie burgers on fresh buns with our matcha mayo or the condiments that you like best.
