Matcha Bubble Tea Recipe

Bubble tea is a drink that is predominantly fruity or milk-based. Of course the real attraction is the pearls of tapioca that sink to the bottom of the glass and can be sucked up through thick bubble tea straws. This matcha bubble tea recipe is tasty and good for you and the perfect antidote to those dog days of summer.

What you need

  • 1 teaspoon matcha tea powder
  • 750ml milk
  • 60g sugar
  • 75g large tapioca pearls
  • ice cubes

Matcha Bubble Tea Method

Cook the tapioca in a pot of boiling water according to the manufacturer’s instructions. Allow to cool. Heat the milk until it’s just about to boil, then remove it from the stove. While your milk is heating, sift the matcha tea powder into a small bowl. Add a little of the hot milk and whisk with a chasen or small hand whisk. Slowly add the matcha mixture to the milk, then add the sugar and give it a god stir. Allow to cool. Add ice and tapioca balls and shake. Serve cold.
