Oh be still my beating heart… matcha pancakes? There’s nothing that gets your family as excited for breakfast as a nice stack of fluffy culinary matcha pancakes. Here’s a recipe that adds some culinary matcha tea powder which makes your pancakes a little healthier. The culinary matcha is not as high grade as the ceremonial matcha which means you get all the health benefits of matcha tea, but at a lower cost.
What you need
- 1 egg
- 1/3 cup milk
- 2 tablespoons vegetable oil
- 1 tablespoon butter
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup flour
- 3 tablespoon Matcha Zen Culinary Matcha
- 1 1/2 teaspoons baking powder
- pinch salt
Beat the the egg, milk, vegetable oil, sugar, and vanilla together in a large bowl. Add the flour, matcha powder, baking powder and salt. Now take mix the batter only until it comes together nicely. Yes, there should still be lumps!
Heat a pan over a low heat and brush with the butter. Use about a 1/4 cup of batter to make some lovely big pancakes. Wait until they bubble, then turn them over and cook for about a minute.
Keep the pancakes warm in the oven until you have a nice stack. Serve with maple syrup and butter.
Culinary Matcha Tips
You can use wholewheat flour for an even healthier pancake.
Add blueberries or bananas for a fruity finish. Peanut butter won’t go amiss here either.
Don’t need a whole stack of pancakes? You can keep the batter in the fridge for a day or two and milk that pancake high for a couple of days!
