What you need:
- 2 cups flour plus a little extra for rolling out the dough
- 1/4 cup culinary matcha tea
- 1 sachet instant yeast
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1/2 cup of milk
- 1/4 cup of water
- 2 tablespoons butter
In large mixing bowl, combine the salt, sugar, culinary grade matcha, yeast and 1/4 cup flour. Heat the milk, butter and water to 50 degrees C (130 F) and add it to your dry ingredients. Mix well and slowly add the remaining flour until a soft dough is formed.
Use a little extra flour to dust your kitchen counter. Knead dough for 8-10 minutes until it is smooth and silky. Cover the dough and leave it to rest for 15 minutes.
Divide dough into 12 equal parts and roll 10 of them into round buns. Use the remaining two to create two small balls for each frog’s eyes. Make an indent into the sides of each bun and press the eyes down into the indent.
Place the frog sliders onto your baking sheet and leave to rise in a warm place (they should double in size) for about 30 minutes.
Bake at 190 C (375 F) for 20 minutes or until slightly brown.
